Small-maker preserves rotated through the counter and the wholesale list. We work with two Sydney makers and rotate their range across the seasons.
The pantry range
We do not make our own jams, chutneys or sauces. We partner with two small Sydney makers who supply us through the year, and rotate their range across the counter and the wholesale list.
Current rotation
- Quince paste from a Bowral maker, batch-made each autumn
- Tomato and chilli chutney from a southern highlands producer, restocked spring and summer
- Seville orange marmalade made annually from a single Adelaide grower
- House-made fig jam during the four weeks the Sydney fig tree across the lane is in fruit
- Sourdough bread butter pickle, our own recipe, made fortnightly through summer
Pairing notes
The marmalade and the brioche burger bun are the pairing customers ask for most. The quince paste sits well on the seven-grain Canadian with a hard cheese. The chilli chutney was built for the sesame brioche bun.
